I roasted it as a light roast, It was very floral and smooth, the medium roast had a nice nutty feel as well as the dark roast had hints of bakers chocolate. All three were delightful. The Story Behind Huehuetenango Xuj Kape Women Produced:
Sourced from a dedicated collective of 19 woman-owned smallholder farms across Aldea Q’om and Canton El Plan, this coffee represents the strength and craft of the Xuj Kape program. Nestled in the remote, high-altitude mountains of Huehuetenango near the Mexican border, these farmers meticulously tend to 26 hectares of Bourbon and Caturra varieties. The region's volcanic soil, consistent rainfall, and ideal microclimates allow the cherries to mature beautifully, resulting in a bright, complex profile with a sweet, refined finish.
